Grilled Zucchini with Grilled Garlic Scape Hummus & Tabbouleh

It’s zucchini season, and our CSA boxes are filled with an abundance of these tasty summer veggies and more! From zucchinis to garlic scapes, to greens, greens, and more greens – we couldn’t be happier with our awesome CSA boxes from our local organic farm.  We paired our CSA garlic scapes and parsley with the grilled zucchini for a tasty meal.  The grilled garlic scape hummus is a perfect complement to the fresh Tabbouleh.  I would make the hummus for crackers and veggies too!  It was super tasty!  Please enjoy this recipe for our Grilled Zucchini with Grilled Garlic Scape Hummus & Tabbouleh, yum!

Grilled Zucchini with Grilled Garlic Scape Hummus & Tabbouleh

Grilled Zucchini

  • zucchini cut into 1/3″ planks
  • salt and peppered
  1. Grill about 5 minutes each side on medium-high heat.

Grilled Garlic Scape Hummus

  • 3-4 garlic scapes
  • 1 small garlic clove, minced
  • 1 can chickpeas, drained (reserve liquid) and rinsed
  • 6 T tahini
  • 2 T lemon juice, (grab our favorite juicer)
  • water and/or reserved liquid
  • salt and pepper to taste
  1. Lightly spray garlic scapes with oil, salt and pepper, and grill for 3-5 minutes per side over medium-high heat; chop and set aside with dry ingredients
  2. Place garlic scapes and garlic in the food processor and process until well minced, scraping down sides as needed.
  3. Add chickpeas, tahini, and lemon juice; pulse a few times and then process, scraping down sides as needed.
  4. With processor running, slowly add liquid to desired consistency.
  5. Process until smooth and creamy.

Super Grain Tabbouleh

  • 1 bunch of parsley, rough chopped
  • 2 C cooked grains
  • 1 C tomatoes, diced
  • scallions, finely sliced
  • 3 T lemon juice
  • red wine vinegar
  • chopped mint leaves
  • salt and pepper to taste
  1. Mix all ingredients; dress with red wine vinegar, salt, and pepper to taste

The Assembly

  1. Grilled zucchini
  2. Heaping pile of grilled garlic scape hummus
  3. Pile on the Tabbouleh
  4. Snap a pic and share #veginspiredfoodies
