March Meatless Monday Madness, Week 3

I did receive a comment from a reader… “My husband does not like to eat meals without meat, what do you suggest?” I’d like to address this quickly and add a couple of hearty options for our meatless meals today.

When John and I first began this adventure, we both said we’d never go completely vegan.  We just wanted to add more meatless meals to our weekly menu.  I commend you for wanting to do the same.  The key to success at this lifestyle is to not be too hard on yourself.  Educate yourself on what you want to avoid and work towards that. When your family is not excited about the meatless meals, it can be frustrating.  I am sure John wasn’t too excited when I sat across from him chowing down on cheeseburgers when he was working so hard to get us into this lifestyle, but now I love it.  Some of the first meals I really fell in love with were potato tacos and portobello mushroom meals.  I felt like the tacos were so filling and I didn’t really miss the meat and the portobellos were so meaty and hearty they were a great fill in.  Here are 3 options to try.

 

Meatless meal 1

Thai stir-fry with pasta or rice. Grab a bag of frozen stir fry veggies (or cut and slice your own).  If using frozen, thaw in the microwave first.  In the meantime, cook your starch. Sauté veggies. Stir in 2 tsp Thai red curry paste.  Stir in 4 T liquid aminos or soy sauce,  1 T fresh lime juice, 1 T brown sugar.  Toss with pasta or serve with rice. Sprinkle with thinly sliced scallions and serve with sweet Thai chili sauce.

 

Meatless meal 2

Potato tacos.  Boil red/ waxy potatoes, sauté onion, add garlic, taco seasoning, add potatoes and 2 T of water, keep extra water close to deglaze or keep potatoes from burning, add by T if needed.  Cook potato in taco seasoning until well coated, serve in your favorite shells with your favorite taco toppings.  We love to load up on salsa, avocado/guacamole, tomatoes, olives, lettuce,and even radishes.,  You can use vegan cheese and vegan sour cream if you’d like.

 

Meatless meal 3

Portobello sandwich.  Heat oven to 475. Brush both sides of portobellos (stems removed) lightly with olive oil, and sprinkle with salt and pepper. Place on a baking sheet top-side-down and bake for 20 minutes, or until tender. Flip over and bake for 5 minutes or until browned.  Serve on buns with your favorite toppings.  You may toast your buns open-end-down on the baking sheet in the last minute or two until lightly browned.  One of our favorite topping combinations is onion slices (about 1/4 inches thick – brush with oil, salt & pepper, and place on the baking sheet when you flip the shrooms), tomato, mixed greens tossed with balsamic vinegar, and Vegenaise.

For a side of potato wedges, microwave wedges of potato cut 1/2 inch thick for 3 minutes on high, salt and pepper to taste and roast on a separate baking sheet (oiled or on parchment paper) for 20 minutes, flip and roast for 5 minutes on the second side.
