Wow! Four weeks so far. The crew at VegInspired is so proud of you! Keep up the good work! Since it is spring, I hope you can dig out your grill and take advantage of some beautiful spring
weather today to grill up some delicious veggie meals!!
Meatless Meal 1
Veggie Skewers Over Pasta
Skewer up some fresh peppers, onions, small potatoes, mushrooms, pineapple, and/or anything else you love and grill them until they have nice brown grill marks. Add to a bed of cooked pasta for a complete meal.
Meatless Meal 2
Rice, Grilled Asparagus , and Eggplant “Steaks”
Toss the asparagus with olive oil and grill till charred. Cook your rice according to package directions.
Grilled Eggplant- cut into “steaks”. Mix garlic, olive oil, salt, thyme or oregano and spread on both sides of
“steak”, grill over medium-high flipping once until both sides are streaked with dark brown grill marks. About 8-10 minutes.
