Well, you made it to week 6! How do you feel? By eating meatless meals for the 5 Monday’s in March you have saved over 5,000 gallons of water, over 200 lbs of grains, 5 animals lives, around 150 square feet of forest and over 100 pounds of co2. Way to go!!

Here are today’s meals:
Meatless Meal 1:
Spiced Potatoes with Curried Vegetables. Peel and chop about 1 1/2 lb red or gold potatoes into 3/4 inch cubes. Boil until tender. Drain. Heat some oil in a large nonstick skillet over medium heat. When oil is hot, add about 1 T brown mustard seed, 1/2 tsp ground turmeric, a pinch of cayenne, and a pinch of ground asafetida (if you can find it; check your local Indian or spice store). Toss the potatoes in the spices until combined. Salt to taste. You may exclude the oil and add a bit of water to help the spices coat the potatoes. Serve with rice.
For veggies, sauté chopped onion and 3 garlic cloves. Add 1 tsp ground cumin, 1 tsp ground coriander, and 1/2 tsp turmeric. Mix in a 1 lb package of broccoli and/or cauliflower. Add 1/4 to 1/2 C water, cover and steam until the veggies are tender. Salt to taste.
Meatless Meal 2:
We thought we’d give you a good link to some meatless options when dining out for meal two. When you eat out, don’t be afraid to let your server know you eat meat free. Often times they have suggestions based on previous customers. We also highly recommend planning ahead and checking out the menu and even emailing your local establishments. They are very receptive, in my experience, and the more times people request vegan/ meat-free meals, the more demand goes up! :). I will write a full post on this soon.
Here is a link to PETA’s guide. We also use Happy Cow. Our favorite quick meal restaurants are Chipotle, Jersey Mikes, the Pita Pit, Mellow Mushroom, and Pizza Hut (hand tossed or thin crust, and cheese free with lots of veggies!).
