I am pretty sure I could brunch professionally. If it is not a job; I could easily make it my job. Some days allow for long brunches and other days require a quick or on the go meal. When we are having a lazy day, I want nothing more than John to whip up a big brunch of tofu scramble with tons of veggies, potatoes, tempeh bacon, orange juice; you know “the works.” I can be found loitering in the kitchen snagging a fresh cut veggie or piece of tempeh bacon right off the pan. Despite my desire to brunch daily, some days we prepare a simpler meal. Something like this Vegan Breakfast Sandwich.
This recipe has the workings of a great brunch; all wrapped up in an easy to eat sandwich.
Scrambled Tofu Vegan Breakfast Sandwich
Quick Scrambled Tofu paired with savory tempeh bacon and fresh avocado - WINNER!
- 1 package of vegan bacon we use Lightlife Foods Tempeh Bacon
- 1/4 of a large onion diced
- 1-2 garlic cloves minced
- 1 14 oz container of tofu drained and crumbled
- 1-2 tablespoon nutritional yeast
- 1/4 teaspoon turmeric
- 3/4 teaspoon salt
- pepper to taste
- avocado sliced
- 4 slices of multigrain bread check the ingredients
Cook vegan bacon according to package
Saute onion and garlic
Add crumbled tofu, turmeric, nutritional yeast, salt, pepper and cook until heated through
Build sandwich - bread, tofu scramble, bacon, avocado
