Spring Fever!

While this Vegan Veggie Hoagie is not profound or some unique VegInspired creation it is certainly worth sharing.  This hoagie is great inspiration for adding more fresh veggies to your meals and still enjoying some tasty comfort foods.  Warm weather and sunny days inspire dreams of biking and picnicking.  They also induce a bit of spring fever, which means low maintenance meals are a must.  So grab these ingredients, a sharp knife and get stacking!

Vegan Veggie Hoagie

Spring fever hits and I want to be outside on my bicycle!  This sandwich is my grab and go lunch!

Ingredients

  • 2 half baguettes or 1 long baguette, we love the Whole Foods Bakery half baguettes
  • Vegan Mayo, We love Follow Your Heart Vegenaise *You could sub hummus.
  • 4 slices of your favorite vegan cheese, I use Field Roast Coconut Herb, and John used the Tomato Cayenne Chao
  • Mixed greens
  • Red Wine Vinegar
  • 1-2 Tomatoes, sliced
  • Pickles, sliced
  • Onions, sliced
  • Olives, we used kalamata
  • Chips, Beanfield’s Ranch flavor paired well

Instructions

  1. Slice your baguette
  2. Spread the top and bottom with mayo
  3. Lay the vegan cheese on the mayo
  4. Toss your mixed greens with red wine vinegar and a little salt and pepper, place on the cheese
  5. Add tomatoes
  6. Add pickles
  7. Top with onions
  8. Sprinkle on the olives
  9. Put the baguette together and serve with chips
  10. Take a Picture and share – wink, wink!
  11. Devour!

There is nothing like this type of sandwich on a sunny afternoon.  We hope you put one of these together and take it on an adventure.  We know these will be packed in our cycling cooler for those long bike rides this summer!  Seriously though, I might run to the store right now, writing this has me longing for a Vegan Veggie Hoagie.
