Hoppin' John & Rice Soup

A VegInspired twist, black-eyed peas, collard greens, and rice join forces in this flavorful and hearty soup.  Happy New Year!

Ingredients
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 3 cups water
  • 3 cups vegetable broth
  • 1 can black-eyed peas drained, rinsed
  • 1/2 bunch collards, de-stemmed chopped
  • 1/2 teaspoon thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon paprika
  • 1 bay leaf
  • 3 to 3 1/2 cups cooked brown rice (great way to use up some leftovers)
  • splash Red Wine Vinegar
Instructions
  1. Sauté onions until soft

  2. Add garlic and sauté until fragrant, about 30 seconds

  3. Add the rest of the ingredients

  4. Bring to a boil and simmer for 7-10 minutes

  5. Remove from heat, stir in a splash of red wine vinegar, remove bay leaf

  6. Serve with vinegar, hot sauce, and sauerkraut.
