VegInspired Buddha Bowls

This is our go-to Buddha Bowl.  Variety is the spice of life, so have fun with it!  Add other favorite veggies, roast 'em, grill 'em, sauté them... whatever floats your boat! :)  Be sure to share your VegInspired inspired creations on social media #veginspiredfoodie.  <3

Course: Main Course
  • cups quinoa (any grain you love) cooked according to package
  • 1/2 cup tahini
  • 1/2 cup water
  • 2 cloves garlic minced
  • 1/4 cup lemon juice
  • . greens (we like baby spinach, mostly)
  • . red bell pepper sliced thin
  • . carrots finely shredded
  • . grape tomatoes halved
  • . chickpeas drained & rinsed
  • . sprouts (optional) we sprout our own
  • . cauliflower small florets
  • . broccoli small florets
  • . raw beets finely shredded
  • . avocado diced, sliced, made into a rose, whatevs)
  • . seasoned rice vinegar
  • . hemp hearts (or another seed topping of your choice)
  1. Cook grains according to package

  2. Blend/whisk tahini, water, lemon juice, and garlic - you can add or reduce water for desired consistency

  3. load up your plate/bowl with grains and greens and top with additional veggies, extra points for creative layout.  

  4. Drizzle on the rice vinegar, drizzle on the tahini sauce, sprinkle with your toppings and SERVE (oops - snap a pic first)
