  • 2 cans chickpeas, drained, rinsed, and patted dry
  • 2-3 tablespoons red wine vinegar
  • 1-2 teaspoons oregano
  • 1/2-1 teaspoon garlic powder
  • 4 whole wheat pita
  • greens, spinach, etc.
  • cucumber, chopped
  • tomato, chopped
  • red bell pepper chopped
  • red onion, sliced
  • Yogurt-Tahini Sauce
  1. Preheat oven to 400 degrees Fahrenheit

  2. Roast Chickpeas on a parchment lined baking sheet for 30 minutes

  3. Dress chickpeas with red wine vinegar, oregano, and garlic powder

  4. Warm Pitas

  5. Assemble Gyros in the pitas- greens, chickpeas, chopped vegetables, onions, yogurt-tahini sauce.
