Vegan Bánh Mì Sandwich

Whoa! We were first introduced to Bánh Mì flavors at a burger restaurant in Charlotte, NC. Those pickled veggies, cilantro, and the Asian spices. Yum! I had craved another before I was even able to digest the one I had just eaten. Sadly, that item left the menu, and I was on the search for another Bánh Mì to satisfy my cravings. We’ve dined on Bánh Mì at several vegan restaurants, but I still haven’t come across one that matches that Bánh Mì burger from the past. While this sandwich is not a burger, it does tickle the taste buds with its inclusion of one of our favorite herbs – Thai basil – which we are lucky enough to get in our CSA share! 🙂

Vegan Bánh Mì Sandwich


Vegan Bánh Mì Sandwich
Course: Main Course
Ingredients
  • Tofu sliced into finger-wide thin sticks
  • Carrots ribboned (we used a peeler to cut ribbons)
  • Daikon Radish ribboned (peeler)
  • Seasoned Rice Vinegar
  • Cucumber sliced
  • Jalapeno sliced (optional)
  • Cilantro
  • Thai Basil
  • French Baguette you could substitute a hoagie roll, but a piece of baguette cut lengthwise worked well
  • Vegan Mayo we love the Tofu-Cashew Mayo from the PlantPure Cookbook
  • Liquid Aminos you could sub soy sauce - we used just a spritz, so you don't need much
  • Sriracha optional
Instructions
  1. Preheat oven to 450
  2. Toss Carrots and Daikon ribbons in Seasoned Rice Vinegar, set aside

  3. Cut tofu, lay on parchment paper, season with salt and pepper
  4. Bake tofu for 15-20 minutes per side; you want the outside slightly crispy and the inside chewy
  5. Slice cucumber and jalapeno
  6. Slice baguette lengthwise

Assemble:

  1. Bread
  2. Mayo
  3. Siracha
  4. Cucumbers
  5. Baked Tofu
  6. Spritz with Liquid Aminos
  7. Carrot and Daikon
  8. Jalapeno
  9. Herbs
