Vegan Mexican Street Corn
Sweet corn! A vegetable with a season that is WAY too short. Fortunately for us, we received some sweet corn in our CSA share and were able to try it a couple of different ways. One way was this amazing vegan Mexican Street Corn. When roasting the corn under the broiler; don’t be alarmed by the popping sounds. This recipe pairs well as a side!
Another indulgent recipe using Vegan Mayo. We have yet to find a whole food, plant-based recipe that we like. Once we do, you’ll be the first to know, until then, we will support our favorite vegan mayo brands – Just Mayo and Follow your Heart Vegenaise.

Mexican Street Corn {vegan}
Yes! Finally that roasted, deliciously smothered, and vegan Mexican street corn!
Ingredients
- corn on the cob, husked
- 1 part vegan mayonnaise
- 1 part vegan sour cream
- 1 tablespoon or to taste cilantro
- chili powder, to taste
- salt and pepper, to taste
Instructions
- Roast the husked corn under the broiler until browned.
- Mix the mayo and sour cream, and cilantro, chili powder, salt, and pepper to taste.
- Smother the corn with the mixture
