Mexican Street Corn {vegan}

Vegan Mexican Street Corn

Sweet corn!  A vegetable with a season that is WAY too short.  Fortunately for us, we received some sweet corn in our CSA share and were able to try it a couple of different ways.  One way was this amazing vegan Mexican Street Corn.  When roasting the corn under the broiler; don’t be alarmed by the popping sounds.  This recipe pairs well as a side!

Another indulgent recipe using Vegan Mayo.  This recipe works by substituting our Cashew Garlic Aioli for the mayo AND sour cream – creating an oil-free option. Enjoy!
