Vegan Yolk Sauce

Breakfast sandwiches and dishes like a loco moco traditionally have an egg with a “yolky” center that splits open and oozes all over the meal.  That can be difficult to replicate with just tofu, so we created this tasty vegan yolk sauce for our dishes.  It’s cruelty-free, oil-free, and thick enough to give you the ooze.

Ingredients

  • 1 cup non-dairy milk, we used soy
  • 2 tablespoon chia seeds
  • 1 tablespoon nutritional yeast
  • 1 teaspoon Dijon
  • 1/2 teaspoon liquid aminos
  • 1/4 teaspoon paprika
  • 1/8 teaspoon turmeric
  • 1/8 teaspoon black salt

Instructions

  1. Blend all ingredients

We used this delicious sauce to top breakfast burgers and loco moco bowls (rice, veggie burger, baked tofu, gravy, and yolk sauce). YUM! This would be a great sauce for breakfast dishes, tofu scramble wraps, and pretty much anywhere you want a yummy sauce.  I am thinking a modification to our Vegan Breakfast Sandwich might be an open-faced version with Vegan Yolk Sauce.  EEK! Not wishing away my week, but Sunday Brunch might have just been planned!
